1 lb large shrimp, peeled and deveined

8 oz linguine or spaghetti

4 tablespoons unsalted butter

4 tablespoons olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Lemon wedges, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and reserve 1 cup of pasta water.

    Prepare the Shrimp: While the pasta cooks, pat the shrimp dry with paper towels and season lightly with salt and pepper.

      Sauté the Garlic: In a large skillet over medium heat, melt the butter and add the olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, making sure not to brown the garlic.

        Cook the Shrimp: Add the shrimp to the pan and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

          Make the Sauce: In the same skillet, pour in the white wine and lemon juice, scraping the bottom of the pan to release any bits. Allow the sauce to simmer for about 2-3 minutes until slightly reduced.

            Combine Pasta and Shrimp: Return the shrimp to the skillet and add the cooked pasta along with the lemon zest. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

              Finish with Parsley: Stir in the fresh parsley and adjust seasoning with salt and pepper to taste.

                Serve: Divide the Garlic Butter Shrimp Scampi among plates. Serve with lemon wedges for an extra zing.
