Ingredients
  

Steak (ribeye or sirloin) - 2 (about 1-inch thick)

Baby potatoes - 1 pound, halved

Garlic - 6 cloves, minced

Butter - 1/2 cup (1 stick)

Olive oil - 2 tablespoons

Fresh herbs (rosemary and thyme) - 2 sprigs each, chopped

Salt - to taste

Black pepper - to taste

Lemon juice - 1 tablespoon (optional for brightness)

Instructions
 

Prepare the Potatoes:

    - Begin by preheating your oven to 400°F (200°C).

      - In a medium bowl, toss the halved baby potatoes with olive oil, salt, and pepper until evenly coated.

        - Spread the potatoes on a baking sheet in a single layer and roast in the oven for about 25-30 minutes, or until golden and tender, flipping halfway through.

          Season the Steak:

            - While the potatoes are roasting, take the steaks out of the refrigerator and let them rest at room temperature for about 15-20 minutes.

              - Generously season both sides of the steaks with salt and black pepper.

                Cook the Steak:

                  - In a large skillet (preferably cast-iron), heat 1 tablespoon of olive oil over medium-high heat until shimmering.

                    - Add the seasoned steaks and sear for 4-5 minutes on one side without moving them until a nice crust forms.

                      - Flip the steaks and add the butter, minced garlic, and chopped herbs to the pan.

                        - As the butter melts, use a spoon to baste the garlic butter over the steaks continuously for another 4-5 minutes for medium-rare to medium doneness (adjust time for desired doneness).

                          - Remove the steaks from the skillet and let them rest for 5-10 minutes on a plate, covering loosely with foil to keep warm.

                            Finish the Potatoes:

                              - Once the steaks are done resting, check the potatoes. If they are perfectly roasted, toss them in the skillet with leftover garlic butter for a minute to absorb the flavors.

                                Serve:

                                  - Slice the steaks against the grain and serve alongside the roasted garlic butter potatoes. Drizzle with a bit of lemon juice if desired for extra brightness.
