Ingredients
  

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ tsp dried)

1 teaspoon fresh thyme, chopped (or ½ tsp dried)

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Instructions
 

Prep the Potatoes: In a pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Cook the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak cubes with salt and black pepper. Add the steak to the skillet in a single layer and sear for about 3-4 minutes, flipping halfway until browned. Remove steak from skillet and set aside.

      Sauté Garlic and Herbs: In the same skillet, add 2 tablespoons of butter. Once melted, add the minced garlic, rosemary, and thyme. Sauté for about 1 minute until fragrant.

        Combine Ingredients: Add the boiled potatoes to the skillet and stir to coat them in the garlic and herb mixture. Cook for an additional 5-7 minutes until the potatoes are crispy and golden brown, stirring occasionally.

          Finish with Steak: Return the cooked steak to the skillet. Add the remaining 2 tablespoons of butter and toss everything together until the steak is heated through and well coated in garlicky butter.

            Serve: Garnish with freshly chopped parsley and serve hot.
