1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

Juice of 1 lemon

Begin by seasoning the steak cubes with salt, pepper, paprika, and thyme. Let them marinate for 10-15 minutes to absorb the flavors.

    In a large skillet, heat the olive oil over medium heat. Add the baby potatoes cut-side down in a single layer. Cook for about 10 minutes, until they are golden and crispy, flipping occasionally.

      Once the potatoes are browned, remove them from the skillet and set aside.

        In the same skillet, add the seasoned steak cubes. Sear on medium-high heat for about 3-4 minutes, or until browned on all sides but still medium-rare in the center. Remove the steak from the skillet and let it rest.

          Lower the heat to medium and add the butter and minced garlic to the skillet. Cook for 1-2 minutes, allowing the garlic to become fragrant but not burnt.

            Add the Worcestershire sauce and lemon juice to the skillet, then return the potatoes and steak to the skillet. Toss everything together gently until well-coated in the garlic butter sauce.

              Cook for an additional 2-3 minutes, warming everything through and allowing the flavors to meld.
