1 lb sirloin steak, cut into bite-sized pieces

4 medium potatoes, diced (Yukon gold or red)

4 tbsp unsalted butter

4 cloves garlic, minced

2 tsp fresh rosemary, chopped (or 1 tsp dried)

1 tsp fresh thyme leaves (or ½ tsp dried)

Salt and freshly ground black pepper, to taste

2 cups spinach (optional)

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Prep the Ingredients: Rinse and dice the potatoes into small, even cubes for even cooking. Cut the steak into bite-sized pieces and season with salt and pepper.

    Cook the Potatoes: In a large skillet over medium heat, add olive oil. Once hot, add the diced potatoes in a single layer. Cook for about 10-15 minutes, stirring occasionally, until they are golden brown and tender. Once done, remove the potatoes from the skillet and set aside.

      Sear the Steak: In the same skillet, add 1 tablespoon of butter. Increase heat to medium-high. When the butter is melted and sizzling, add the steak pieces in a single layer. Sear for about 2-3 minutes on each side until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

        Make the Garlic Butter: In the same skillet, add the remaining butter. Once melted, add the minced garlic, rosemary, and thyme. Sauté for 1-2 minutes until fragrant, stirring frequently to avoid burning the garlic.

          Combine: Return the seared steak and potatoes to the skillet with the garlic butter. Stir gently to coat everything in the delicious mixture. If using spinach, add it in and toss until wilted (around 2 minutes).
