Ingredients
  

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and boil for about 15-20 minutes or until fork-tender. Drain and set aside.

    Season the Steak: While the potatoes are boiling, season the steak cubes with salt and pepper.

      Sear the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the steak cubes in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side until browned but not fully cooked. Remove the steak from the skillet and set it aside.

        Sauté Potatoes: In the same skillet, add the boiled potatoes. Let them cook undisturbed for about 4-5 minutes until they get a nice golden-brown crust. Stir occasionally to brown evenly.

          Make Garlic Butter: Push the potatoes to one side of the skillet. In the empty space, add the butter, minced garlic, fresh rosemary, and thyme. Let the butter melt and the garlic become fragrant (about 1 minute). Mix the garlic butter with the potatoes, ensuring they are all well coated.

            Combine Ingredients: Return the steak bites to the skillet, stirring everything together. Cook for an additional 2-3 minutes until the steak is cooked to your desired doneness (medium-rare is ideal).

              Serve: Remove the skillet from heat. Garnish with fresh parsley and add additional salt and pepper to taste. Serve hot and enjoy the savory goodness!
