1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon soy sauce (optional)

Fresh parsley, chopped for garnish

Cook the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Season the steak bites generously with salt and black pepper. Once the oil is hot, add the steak pieces in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side, or until they are browned and cooked to your desired doneness. Remove from the skillet and set aside.

      Make Garlic Butter: In the same skillet, reduce the heat to medium. Add the butter, minced garlic, chopped rosemary, and thyme. Stir together and cook for about 1-2 minutes until the garlic is fragrant but not burnt.

        Combine Steak and Potatoes: Add the cooked potatoes to the skillet with the garlic butter mixture. Toss gently to coat. Return the seared steak bites to the skillet. If using, drizzle the soy sauce over the mixture and toss everything together for an additional minute to heat through and meld the flavors.
