Garlic Butter Steak Bites with Potatoes

Ingredients
  

1 lb (450g) sirloin steak, cut into bite-sized cubes

1 lb (450g) baby Yukon Gold potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

2 tablespoons olive oil

Optional: Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Potatoes:

    - In a large pot, add the halved baby Yukon Gold potatoes and cover with water. Bring to a boil and simmer for about 10-12 minutes, or until the potatoes are fork-tender. Drain well and set aside.

      Cook the Potatoes:

        - In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once heated, add the potatoes cut side down in a single layer. Let them cook undisturbed for about 4-5 minutes until golden brown and crispy. Flip the potatoes and add another tablespoon of olive oil if needed. Cook the other side for an additional 4-5 minutes. Remove and set aside in a warm bowl.

          Sear the Steak Bites:

            - In the same skillet, add 1 tablespoon of olive oil over medium-high heat. Season the steak cubes generously with salt and pepper. Once the oil is hot, add the steak cubes in a single layer (you may need to do this in batches). Sear the steak bites for about 2-3 minutes on each side until they are browned and cooked to your desired doneness (medium-rare is recommended). Remove the steak from the skillet and set aside.

              Garlic Butter Sauce:

                - In the same skillet, lower the heat to medium. Add the butter, minced garlic, thyme, and rosemary. Stir and let the garlic cook for about 1 minute, being careful not to burn it.

                  Combine and Finish:

                    - Return the steak bites to the skillet along with the cooked potatoes. Toss everything together until well-coated in the garlic butter sauce. Cook for an additional 1-2 minutes until heated through.

                      Serve:
