Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tbsp unsalted butter, divided

4 cloves garlic, minced

1 tbsp fresh rosemary, finely chopped

1 tbsp fresh thyme, finely chopped

1 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prep the Steak: In a bowl, season the cubed sirloin steak with salt, pepper, and smoked paprika. Let it marinate for about 15 minutes to help enhance the flavors.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned steak bites in a single layer. Make sure not to overcrowd the pan; you may need to do this in batches.

Sear the Steak: Cook the steak bites for about 2-3 minutes on each side for medium-rare, or longer if you prefer your steak more done. Remove the steak bites from the skillet and set aside on a plate.

Make Garlic Herb Butter: In the same skillet, lower the heat to medium and add 2 tablespoons of unsalted butter. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn it.

Add Herbs: Stir in the chopped rosemary and thyme, and cook for an additional 30 seconds.

Combine: Return the cooked steak bites to the skillet, mixing them with the garlic herb butter until well coated. Add the remaining 2 tablespoons of butter, tossing to melt and combine.

Serve: Garnish with chopped fresh parsley and serve with lemon wedges on the side for an extra zing.
