1.5 lbs pork tenderloin

5 cloves garlic, minced

2 tbsp fresh rosemary, finely chopped

2 tbsp fresh thyme, finely chopped

1 tbsp fresh parsley, finely chopped

1 tbsp Dijon mustard

2 tbsp olive oil

1 tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional for some heat)

1 lemon, zested and juiced

Kitchen twine (for tying, optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). This high heat will help form a beautiful crust on the pork tenderloin.

    Prepare the Marinade: In a mixing bowl, combine minced garlic, rosemary, thyme, parsley, Dijon mustard, olive oil, lemon juice, lemon zest, salt, black pepper, and red pepper flakes (if using). Mix well until a paste forms.

      Prepare the Pork Tenderloin: Trim any excess fat or silver skin from the pork tenderloin. If desired, tie the tenderloin with kitchen twine to maintain its shape during cooking.

        Marinate the Meat: Rub the garlic herb mixture generously all over the pork tenderloin, ensuring it’s well coated. For best results, let it marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
