Garlic Herb Roasted Potatoes

2 pounds baby or new potatoes, halved

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: 1 teaspoon lemon zest (for added brightness)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Potatoes: In a large mixing bowl, combine the halved potatoes with olive oil, minced garlic, rosemary, thyme, oregano, smoked paprika, salt, and pepper. If using lemon zest, also add it at this stage. Toss everything together until the potatoes are well coated.

      Arrange in Pan: Spread the seasoned potatoes in a single layer on a large baking sheet. Be sure to leave a little space between each piece to ensure they roast evenly.

        Roast: Place the baking sheet in the preheated oven and roast for about 30-35 minutes, or until the potatoes are golden brown and crispy on the outside. Toss the potatoes halfway through the cooking time to promote even browning.

          Serve: Once done, remove the potatoes from the oven and let them cool for a few minutes. Transfer to a serving dish and garnish with freshly chopped parsley.
