1 pound sea scallops, patted dry

2 tablespoons unsalted butter

2 tablespoons olive oil

3 cloves garlic, minced

Juice and zest of 1 large lemon

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Scallops: Ensure the scallops are completely dry by patting them with paper towels. This crucial step ensures a beautiful sear.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it shimmers but doesn’t smoke.

      Sear the Scallops: Season the scallops with salt and pepper. Place them in the hot skillet, ensuring they are not crowded. Sear for about 2-3 minutes on one side until a golden crust forms. Flip them and sear for another 1-2 minutes until cooked through. Remove scallops from the pan and set them aside on a plate.

        Make the Garlic Lemon Butter: In the same skillet, reduce the heat to medium. Add the butter and allow it to melt, scraping up any browned bits from the scallops. Add the minced garlic and sauté until fragrant (about 1 minute), being careful not to burn it.

          Add Lemon: Stir in the lemon juice and zest, mixing well to combine. Allow the sauce to simmer for another minute.

            Combine: Return the scallops to the skillet, turning to coat them in the garlic lemon butter sauce.

              Serve: Plate the scallops, drizzling them with extra sauce from the pan. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
