Ingredients

1 lb ground chicken

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup milk

1 large egg

1 teaspoon onion powder

1 teaspoon dried Italian herbs

Salt and pepper to taste

1 tablespoon olive oil

1 cup marinara sauce (for serving)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or a loaf pan.

Prepare the Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, milk, egg, onion powder, and dried Italian herbs. Season generously with salt and pepper.

Mix Thoroughly: Using your hands or a spatula, mix all the ingredients together until well combined. Be careful not to overmix, as this can make the meatloaf dense.

Shape the Meatloaves: Shape the mixture into individual small loaf shapes, about 2 inches wide and 4 inches long, placing them on the prepared baking sheet or in the loaf pan. You can also make them in muffin tins for an easy serving option.

Drizzle with Olive Oil: Drizzle the tops of the meatloaves with olive oil to help them brown nicely in the oven.

Bake: Place the meatloaves in the preheated oven and bake for 25-30 minutes, or until they reach an internal temperature of 165°F (74°C).

Serve: Remove the meatloaves from the oven and let them rest for a few minutes before serving. For a complete meal, serve the meatloaves topped with marinara sauce and a side of spaghetti or a fresh salad.
