8 oz penne pasta

2 cups cooked chicken, shredded

1 cup broccoli florets (fresh or frozen)

3 cups spinach, packed

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1 cup chicken broth

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook until al dente, according to package instructions. Drain and set aside.

      Sauté vegetables: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in the broccoli and spinach, cooking until just wilted (about 3-5 minutes). Season with salt, pepper, and red pepper flakes (if using).

        Mix the chicken: In a large mixing bowl, combine the cooked chicken, sautéed vegetables, cooked pasta, chicken broth, Italian seasoning, ricotta cheese, and half of the Parmesan cheese. Mix well to combine.

          Assemble the bake: Transfer the mixture to a greased 9x13 inch baking dish. Spread evenly. Top with shredded mozzarella and the remaining Parmesan cheese.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Cool and garnish: Let the pasta bake cool for 5 minutes before serving. Garnish with fresh parsley for a pop of color.
