Ingredients

1 pound Brussels sprouts, trimmed and halved

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

2 tablespoons balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature will ensure crispy Brussels sprouts.

Prepare the Brussels Sprouts: In a large mixing bowl, combine the halved Brussels sprouts, olive oil, minced garlic, salt, pepper, and red pepper flakes (if using). Toss everything together until the sprouts are evenly coated.

Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on a lined baking sheet. Ensure there’s space between each piece for optimal roasting.

Add Cheese and Vinegar: Roast the Brussels sprouts in the preheated oven for about 20 minutes. After 20 minutes, remove them from the oven and sprinkle the grated Parmesan cheese evenly over the sprouts. Drizzle with balsamic vinegar.

Final Roast: Return the baking sheet to the oven and roast for an additional 5-10 minutes, or until the cheese is melted and slightly golden, and the Brussels sprouts are tender and crispy-edged.

Garnish and Serve: Remove the trays from the oven, and sprinkle chopped fresh parsley over the Brussels sprouts before serving. Enjoy them hot as a delectable side dish!
