Ingredients
  

8 oz. soba noodles

2 tablespoons sesame oil

6 cloves garlic, minced

1 tablespoon fresh ginger, grated

¼ cup soy sauce

2 tablespoons rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon chili paste (adjust to taste)

2 green onions, sliced

2 tablespoons sesame seeds, toasted

Fresh cilantro, for garnish

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the soba noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), and chili paste until well combined.

      Sauté the Aromatics: In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1-2 minutes until fragrant. Be careful not to burn the garlic.

        Combine: Add the cooked noodles to the skillet, pouring the sauce over them. Toss everything together until the noodles are evenly coated, and heat for another 1-2 minutes.

          Garnish and Serve: Remove from heat and toss in sliced green onions and toasted sesame seeds. Garnish with fresh cilantro before serving.
