1 cup unsalted butter, softened

1/2 cup powdered sugar, plus extra for dusting

1 teaspoon vanilla extract

2 cups all-purpose flour

1 cup finely chopped pecans

1/4 teaspoon salt

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.

      Mix in the vanilla extract until well combined.

        Gently fold in the flour, chopped pecans, and salt until the dough comes together. Be careful not to overmix.

          Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, spacing them about an inch apart.

            Bake in the preheated oven for 15-18 minutes, or until they are lightly golden on the bottom but still pale on top.

              Once baked, remove from the oven and let cool on the baking sheet for about 5 minutes.

                While still warm, roll the cookies in additional powdered sugar until well coated. Let them cool completely on a wire rack.

                  Once cool, you can roll them in powdered sugar again if desired for extra sweetness.
