1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

4 large eggs

1 cup unsulfured molasses

1 cup brewed coffee (cooled)

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix Dry Ingredients: In a medium bowl, sift together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.

      Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy. This should take about 3-5 minutes.

        Add Eggs and Molasses: Add the eggs one at a time, beating well after each addition. Then, mix in the molasses and vanilla extract until fully combined.
