3 cups rolled oats

1 cup pecan halves

1/2 cup sunflower seeds

1/2 cup shredded coconut (unsweetened)

1/2 cup maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries (or other dried fruit, optional)

Instructions
 

Preheat and Prepare: Preheat the oven to 325°F (163°C). Line a large baking sheet with parchment paper or a silicone baking mat for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, pecan halves, sunflower seeds, shredded coconut, cinnamon, and salt. Stir until evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.

        Combine Ingredients: Pour the wet ingredients over the dry ingredients. Mix thoroughly, ensuring all the dry mixture is evenly coated with the wet mixture.

          Spread Out and Bake: Spread the granola mixture in an even layer on the prepared baking sheet. Bake in the preheated oven for about 25-30 minutes, stirring every 10 minutes to ensure even browning. Keep an eye on it towards the end to prevent burning.

            Cool Down: Once golden brown and fragrant, remove the baking sheet from the oven and let the granola cool completely on the baking sheet. It will become crunchier as it cools.

              Add Dried Fruit: If you’re using dried cranberries or other dried fruits, once the granola has cooled, mix them in.

                Store: Transfer the cooled granola to an airtight container. It can be stored at room temperature for up to 2 weeks.
