Golden Parmesan Crusted Mushroom Burgers

4 large portobello mushrooms (stems removed)

1 cup finely grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ cup all-purpose flour

2 large eggs, beaten

Olive oil, for drizzling

4 whole-grain burger buns

4 slices of fresh mozzarella cheese

Fresh basil leaves, for garnish

Sliced tomatoes and lettuce, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Parmesan Mixture: In a medium bowl, mix together the grated Parmesan, breadcrumbs, minced garlic, parsley, oregano, salt, and black pepper until well combined.

      Prepare Mushrooms: Lightly dust the portobello mushrooms with flour, shaking off any excess. This will help the egg stick.

        Bread the Mushrooms: Dip each mushroom cap first into the beaten eggs, ensuring it's well-coated, then press it into the Parmesan mixture, covering the top completely. Repeat for all four mushrooms.

          Arrange on Baking Sheet: Place the breaded mushrooms on the prepared baking sheet and drizzle lightly with olive oil.

            Bake the Mushrooms: Bake in the preheated oven for around 20-25 minutes, or until the cheese is golden and the mushrooms are tender.

              Melt the Cheese: During the last 5 minutes of baking, add a slice of fresh mozzarella onto each mushroom cap to melt.

                Toast the Buns: While the mushrooms are baking, lightly toast the whole-grain burger buns on a pan or in the oven until they are golden and warm.

                  Assemble the Burgers: Place the melted mozzarella-topped mushrooms on the bottom half of each toasted bun. Add fresh basil leaves, sliced tomatoes, and lettuce. Top off with the other half of the bun.
