Ingredients

1 cup polenta (cornmeal)

4 cups vegetable or chicken broth

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Polenta: In a medium saucepan, bring the vegetable or chicken broth to a boil. Gradually whisk in the polenta, stirring constantly to prevent lumps. Reduce the heat to low and continue to cook, stirring frequently, for about 15-20 minutes, or until the polenta is thick and creamy.

Add Flavor: Once the polenta is cooked, stir in the butter, Parmesan cheese, garlic powder, oregano, thyme, salt, and black pepper. Mix until well combined and the cheese is melted.

Spread and Cool: Pour the polenta into a greased 9x9 inch baking dish or a parchment-lined tray, spreading it evenly with a spatula. Allow it to cool at room temperature for about 30 minutes, then transfer it to the refrigerator for at least 1 hour until it firms up.

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Cut into Fries: Once the polenta has set, remove it from the fridge and cut it into fry-shaped sticks (about 1/2-inch thick).

Coat and Bake: In a large bowl, drizzle the olive oil over the polenta fries and toss gently to coat. Place the fries on the prepared baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh chopped parsley and serve warm with your favorite dipping sauce (such as marinara or aioli).
