1 lb beef tenderloin, trimmed

Salt and pepper, to taste

2 tablespoons olive oil

1 French baguette, sliced into 1/2-inch rounds

1 tablespoon unsalted butter

2 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Dijon mustard

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

Fresh arugula or microgreens, for garnish

Balsamic glaze, for drizzling

Prepare the Beef: Season the beef tenderloin generously with salt and pepper on all sides. Heat olive oil in a skillet over medium-high heat. Sear the beef for about 4-5 minutes on each side until browned and cooked to your desired doneness (medium-rare is recommended). Remove from heat and let it rest for 10 minutes before slicing.

    Toast the Crostini: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush both sides lightly with melted butter. Toast in the oven for about 5-7 minutes, or until golden brown and crispy.

      Make the Creamy Parmesan Sauce: In the same skillet used for the beef (keep any browned bits for flavor), reduce the heat to medium.
