4 cups fresh peaches, peeled and sliced

1 cup granulated sugar, divided

1 tablespoon lemon juice

1 teaspoon cinnamon

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 cup milk

½ cup unsalted butter, melted

1 tablespoon cornstarch (optional, for thickening)

Whipped cream or vanilla ice cream (for serving)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

    Prepare the Peaches: In a large bowl, combine the sliced peaches, ½ cup of sugar, lemon juice, cinnamon, and vanilla extract. Toss until the peaches are well-coated. If you prefer a thicker filling, sprinkle the optional cornstarch over the peaches and mix well.

      Make the Batter: In another bowl, whisk together the flour, remaining ½ cup of sugar, baking powder, and salt. Gradually add the milk and melted butter to the dry ingredients, stirring until just combined. The batter will be somewhat lumpy; do not overmix!

        Assemble the Cobbler: Pour the batter evenly into the prepared baking dish. Spoon the peach mixture over the batter, ensuring an even distribution. Do NOT stir; the batter will rise around the peaches while baking.

          Bake: Place the baking dish in the preheated oven and bake for 35-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

            Cool and Serve: Once baked, remove from the oven and allow the cobbler to cool for about 10-15 minutes. Serve warm with whipped cream or vanilla ice cream on top for an extra treat!
