Ingredients
  

1 lb (450g) phyllo dough, thawed

1 cup (225g) unsalted butter, melted

2 cups (200g) mixed nuts (walnuts, pistachios, and almonds), finely chopped

1 tsp ground cinnamon

1 cup (200g) granulated sugar

1 cup (240ml) water

1 cup (120ml) honey

1 tsp vanilla extract

1 tsp lemon juice

A pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine the finely chopped mixed nuts, ground cinnamon, and a pinch of salt. Set aside.

      Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.

        Brush a baking dish (approximately 9x13 inches) with melted butter. Place one sheet of phyllo dough in the dish and brush it with butter. Repeat this process for about 8 sheets to form a layer.

          Evenly spread a thin layer of the nut mixture over the phyllo layer.

            Place another 4 sheets of buttered phyllo on top of the nuts, followed by another layer of the nut mixture. Continue layering phyllo and nuts, alternating them until all ingredients are used, finishing with at least 8 layers of buttered phyllo on top.

              Use a sharp knife to cut diamond or square shapes into the top layers of baklava for easy serving later.

                Bake in the preheated oven for about 50 minutes, or until it turns golden brown and crisp.

                  While the baklava is baking, prepare the syrup: In a saucepan, combine the granulated sugar, water, honey, vanilla extract, lemon juice, and salt. Bring to a boil, then reduce heat and let it simmer for about 10 minutes. Remove from heat and let it cool down.

                    Once the baklava is finished baking, immediately pour the cooled syrup over it, ensuring it seeps into the cuts.

                      Allow it to cool for at least 4 hours (or overnight) before serving to help the layers meld together.
