Ingredients
  

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 cups cooked quinoa or rice

1 cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Lemon wedges for serving

For the Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a medium bowl, combine olive oil, oregano, garlic powder, paprika, salt, and pepper. Add chicken breasts to the bowl, ensuring they are well coated. Cover and let marinate in the refrigerator for 30 minutes to 2 hours.

    Prepare Tzatziki Sauce: In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper. Stir until well combined. Refrigerate until serving.

      Cook the Chicken: Preheat the grill or a skillet over medium-high heat. Cook the marinated chicken for 6-8 minutes on each side, or until fully cooked through and internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

        Assemble the Bowls: In large bowls, start with a base of quinoa or rice. Top with sliced chicken, diced cucumber, cherry tomatoes, red onion, Kalamata olives, crumbled feta cheese, and fresh parsley.

          Serve: Drizzle with Tzatziki sauce and serve with lemon wedges on the side for an extra zest.
