Greek Chicken Gyros

1 lb (450g) boneless, skinless chicken thighs

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 tablespoon dried oregano

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper, to taste

4 pita breads

1 cup Greek yogurt

1 tablespoon lemon juice

1 tablespoon fresh dill, chopped

1 cup cucumber, finely diced

1 medium tomato, diced

1 small red onion, thinly sliced

Fresh lettuce leaves, for wrapping

Feta cheese, crumbled (optional)

Marinate the Chicken: In a bowl, combine the minced garlic, olive oil, red wine vinegar, oregano, cumin, paprika, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and marinate for at least 1 hour in the refrigerator (up to overnight for best flavor).

    Prepare Tzatziki Sauce: In a separate bowl, mix the Greek yogurt, lemon juice, fresh dill, and diced cucumber. Season with salt and pepper to taste. Refrigerate until ready to serve.

      Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove chicken from marinade and grill for about 5-7 minutes per side, or until the chicken is fully cooked and has nice grill marks. Let it rest for a few minutes before slicing it into thin strips.

        Warm the Pita Bread: While the chicken rests, lightly grill or heat the pita bread on a pan for 1-2 minutes until warm and pliable.
