Greek Chicken Meatballs with Lemon Orzo

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1/4 cup red onion, finely minced

2 cloves garlic, minced

1 egg, beaten

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

Zest of 1 lemon

For the Lemon Orzo:

1 cup orzo pasta

2 cups chicken broth

2 tbsp olive oil

Juice of 1 lemon

Salt and pepper to taste

1/4 cup fresh dill, chopped (optional)

Lemon slices for garnish

Prepare the Meatballs:

    - In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, red onion, garlic, beaten egg, oregano, salt, pepper, and lemon zest.

      - Mix until just combined; avoid overmixing to keep them tender.

        Shape the Meatballs:

          - Preheat the oven to 400°F (200°C).

            - Using your hands, shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.

              Bake the Meatballs:

                - Bake the meatballs in the preheated oven for about 20-25 minutes, or until cooked through and lightly browned.

                  Cook the Orzo:

                    - In a medium saucepan, bring the chicken broth to a boil. Add the orzo and a pinch of salt, reducing the heat to a simmer.

                      - Cook for approximately 8-10 minutes, or until tender. Stir in the olive oil, lemon juice, and season with salt and pepper to taste. If desired, fold in the fresh dill.
