1 lb ground chicken

1/2 cup breadcrumbs (preferably panko for crispiness)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1 egg, beaten

Zest of 1 lemon

For the Lemon Orzo:

1 cup orzo pasta

2 cups chicken broth (or vegetable broth for vegetarian option)

1/4 cup fresh lemon juice (about 1-2 lemons)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan, red onion, garlic, parsley, oregano, salt, pepper, crushed red pepper flakes, beaten egg, and lemon zest. Mix well using your hands or a spoon until all ingredients are thoroughly combined.

    Form the Meatballs: Preheat your oven to 400°F (200°C). With your hands, form the mixture into 1- to 1.5-inch meatballs and place them on a lined baking sheet.

      Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown on the outside.

        Cook the Orzo: While the meatballs are baking, in a medium saucepan, bring the chicken broth to a boil. Add the orzo and cook according to package instructions, usually about 8-10 minutes. Stir occasionally to prevent sticking.
