8 ounces of fusilli or rotini pasta

1½ cups cherry tomatoes, halved

1 cup cucumber, diced

1 cup kalamata olives, pitted and sliced

¾ cup feta cheese, crumbled

½ cup red onion, finely diced

¼ cup fresh parsley, chopped

¼ cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and black pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Let it cool.

    Prepare the Vegetables: While the pasta is cooling, prepare your vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, kalamata olives, red onion, and parsley.

      Make the Dressing: In a small mixing bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.

        Combine Ingredients: Once the pasta has cooled, add it to the bowl with the vegetables. Pour the dressing over the top and gently toss until everything is evenly coated.

          Add Feta Cheese: Finally, sprinkle the crumbled feta cheese over the salad and give it another gentle toss to incorporate.

            Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature, garnished with additional parsley if desired.
