1 pound fresh green beans, trimmed

1 cup cremini mushrooms, sliced

1 small onion, finely chopped

3 cloves garlic, minced

1 cup sour cream

1 cup shredded cheddar cheese

1 cup French fried onions (plus more for topping)

1 tablespoon olive oil

1 teaspoon Dijon mustard

1 teaspoon soy sauce

1 teaspoon Worcestershire sauce

Salt and pepper to taste

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Instructions
 

Preheat the oven to 350°F (175°C).

    Blanch the green beans: Bring a large pot of salted water to a boil. Add the green beans and cook for about 3-4 minutes until just tender. Drain and immediately place them in a bowl of ice water to stop the cooking process. Drain again and set aside.

      Cook the vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes. Add the sliced mushrooms and continue cooking until the mushrooms are browned and any liquid has evaporated, about 5-6 minutes. Stir in thyme, then remove from heat.

        Combine the base: In a large mixing bowl, combine the sour cream, cheddar cheese, Dijon mustard, soy sauce, Worcestershire sauce, salt, and pepper. Mix well.

          Mix together: Add the blanched green beans and sautéed vegetables to the cheese mixture. Fold in the French fried onions, reserving a handful for topping.

            Bake the casserole: Pour the mixture into a greased 9x13 inch baking dish. Spread evenly and top with the reserved French fried onions.

              Cooking: Bake in the preheated oven for about 25-30 minutes, until the edges are bubbly and the top is golden brown.
