Grilled Avocado Chicken Wraps

2 ripe avocados, halved and pitted

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 whole wheat or spinach tortillas

1 cup fresh spinach leaves

½ cup cherry tomatoes, halved

½ cup shredded cheese (cheddar or Monterey Jack)

¼ cup Greek yogurt or sour cream (for serving)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a small bowl, whisk together olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Coat the chicken breasts with the marinade and let them sit for about 30 minutes to absorb the flavors.

    Preheat Grill: Preheat your grill or grill pan on medium-high heat.

      Grill the Chicken: Place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Remove from the grill and allow to rest for a few minutes.

        Prepare the Avocados: While the chicken is resting, grill the avocado halves for about 2-3 minutes, cut side down. This will add a wonderful smoky flavor. Remove from heat and scoop the insides into a bowl. Mash lightly with a fork, and add lime juice, salt, and pepper to taste.

          Assemble the Wraps: On each tortilla, spread a generous layer of the mashed avocado. Slice the grilled chicken into strips and place it on top of the avocado. Add fresh spinach, halved cherry tomatoes, and a sprinkle of shredded cheese.

            Wrap it Up: Fold in the sides of the tortilla and roll it tightly from the bottom up to encapsulate the filling. If necessary, secure with toothpicks or wrap in parchment paper to hold its shape.

              Serve: Cut each wrap in half and serve with a dollop of Greek yogurt or sour cream on the side. Garnish with chopped cilantro for a fresh touch.
