Grilled Cheese Burrito

4 large flour tortillas

2 cups shredded sharp cheddar cheese

2 cups shredded mozzarella cheese

1 cup cooked and seasoned ground beef or plant-based protein (optional)

1 cup refried beans (canned or homemade)

1 medium avocado, sliced

1 tomato, diced

1 small jalapeño, sliced (optional)

1/4 cup fresh cilantro, chopped

2 tablespoons butter

Salt and pepper to taste

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Filling: In a bowl, mix together the shredded cheddar and mozzarella cheeses. If using, add the cooked ground beef or plant-based protein, refried beans, diced tomatoes, sliced jalapeños, and cilantro. Season with salt and pepper to taste. Set aside.

    Warm the Tortillas: Heat a skillet over medium heat. Place one flour tortilla in the skillet for about 30 seconds, flip it, and warm the other side for another 30 seconds. Remove from the skillet and repeat for the remaining tortillas.

      Assemble the Burrito: Lay a tortilla flat on a plate. Place a generous scoop of the cheese filling in the center, and add a few slices of avocado on top. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to encase the filling.

        Grill the Burrito: In the same skillet or in a grill pan, melt 1 tablespoon of butter over medium heat. Place the burrito seam-side down in the pan and cook for 2-3 minutes until golden brown. Carefully flip the burrito, add another tablespoon of butter, and grill the other side for another 2-3 minutes until crisp and golden.

          Serve: Remove the burrito from the skillet and let it cool for a minute before slicing it in half. Serve warm with salsa and sour cream on the side.
