To achieve the best flavor in your grilled chicken and peach kabobs, marination is key. For optimal taste, marinate the chicken for at least 30 minutes and up to 4 hours. This time frame allows the flavors from your marinade to penetrate the chicken, enhancing its juiciness and flavor profile. If you have the time, marinating overnight can yield even more robust flavors, but avoid exceeding 24 hours as the acid in the marinade can start to break down the chicken, resulting in a mushy texture.

Ingredients

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

½ cup olive oil

3 tablespoons balsamic vinegar

2 tablespoons honey

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Wooden skewers (soaked in water for 30 minutes)

Instructions

Marinate the Chicken: In a large bowl, whisk together the olive oil, balsamic vinegar, honey, garlic powder, smoked paprika, salt, and pepper. Add the cubed chicken to the marinade, stir to coat evenly, and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Skewers: After marinating, thread the chicken, peach wedges, bell pepper pieces, and onion wedges onto the soaked wooden skewers, alternating between ingredients for a colorful presentation.

Preheat the Grill: Preheat your grill to medium-high heat. Brush the grill grates lightly with oil to prevent sticking.

Grill the Kabobs: Place the skewers on the grill and cook for about 12-15 minutes, turning every 3-5 minutes, until the chicken is cooked through and has nice grill marks. The peaches should be tender and caramelized.

Serve: Once cooked, remove the kabobs from the grill and let them rest for a few minutes. Garnish with fresh basil leaves, if desired, and serve warm.

Enjoy: Serve the kabobs with your favorite side dishes, such as a fresh salad or a quinoa pilaf!
