Grilled Chicken with Peach BBQ Glaze

4 boneless, skinless chicken breasts

2 cups fresh peaches, pitted and diced

1/2 cup ketchup

1/4 cup apple cider vinegar

1/4 cup brown sugar

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Fresh basil or parsley for garnish (optional)

Prepare the Peach BBQ Glaze: In a medium saucepan over medium heat, combine the diced peaches, ketchup, apple cider vinegar, brown sugar, soy sauce, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well and cook for about 10 minutes, allowing the mixture to bubble and thicken. Remove from heat and let cool slightly.

    Marinate the Chicken: In a large bowl, pour half of the peach BBQ glaze over the chicken breasts. Make sure to coat them evenly. Cover with plastic wrap and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat the Grill: Heat your grill to medium-high heat. Lightly oil the grates to prevent sticking.

        Grill the Chicken: Remove the chicken from the marinade, shaking off excess. Discard the used marinade. Brush the chicken breasts with olive oil, then place them on the hot grill. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).

          Glaze the Chicken: In the last minute of grilling, brush the remaining peach BBQ glaze over each chicken breast, allowing it to caramelize on the grill. Remove from the grill.

            Serve: Let the chicken rest for 5 minutes. Slice and garnish with fresh basil or parsley if desired. Serve alongside grilled vegetables, rice, or a fresh salad, drizzling extra glaze on top if desired.
