4 ears of fresh corn, husked

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional for spice)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt and pepper, to taste

8 small corn or flour tortillas

Olive oil, for grilling

Optional toppings: crumbled feta cheese, sour cream, lime wedges

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Brush the corn with a little olive oil and season with salt and pepper. Place the corn directly on the grill grates and grill for about 10 minutes, turning occasionally until the kernels are tender and slightly charred. Once done, remove the corn from the grill and let it cool.

    Prepare the Salsa: While the corn is cooling, combine the diced avocados, halved cherry tomatoes, chopped red onion, minced jalapeño, and chopped cilantro in a large bowl.

      Cut the Corn: Once the grilled corn has cooled enough to handle, cut the kernels off the cob and add them to the salsa mixture. Squeeze the juice of 2 limes over the mixture and gently toss to combine. Season with salt and pepper to taste.

        Warm the Tortillas: In a skillet or on the grill, warm the tortillas until they are pliable, about 30 seconds per side.
