Grilled Garlic Lime Shrimp Skewers

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 limes

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh cilantro, chopped (plus extra for garnish)

Wooden or metal skewers (if using wooden, soak for 30 minutes in water)

Marinate the Shrimp: In a bowl, mix together the olive oil, minced garlic, lime zest, lime juice, smoked paprika, cumin, salt, black pepper, and chopped cilantro. Add the shrimp to the marinade, toss until well coated, and let it marinate for about 30 minutes at room temperature.

    Preheat the Grill: Preheat your grill to medium-high heat, around 400°F (200°C). If using wooden skewers, make sure they have soaked for 30 minutes to prevent burning.
