Ingredients

2 ripe nectarines, pitted and sliced

1 cup of fresh burrata cheese

4 oz prosciutto, thinly sliced

4 cups mixed greens (arugula, spinach, and frisée work well)

1/4 cup toasted walnuts, roughly chopped

1/4 cup balsamic glaze

2 tbsp olive oil

Salt and freshly cracked pepper, to taste

Fresh basil leaves, for garnish

Instructions

Prepare the Grill: Preheat your grill or grill pan over medium-high heat.

Grill the Nectarines: Brush the nectarine slices lightly with olive oil. Place them on the grill for about 2-3 minutes on each side, or until grill marks appear and they are slightly softened. Remove from heat and set aside.

Assemble the Salad Base: In a large bowl, combine the mixed greens. Drizzle with 1 tbsp of olive oil, and lightly season with salt and pepper. Toss to combine.

Add the Burrata: Tear the burrata into pieces and strategically place it on top of the dressed greens.

Layer the Prosciutto: Drape the prosciutto slices over the burrata and mixed greens, allowing them to fall beautifully for presentation.

Add Grilled Nectarines: Arrange the grilled nectarine slices atop the prosciutto and greens.

Finish with Walnuts and Garnish: Sprinkle the toasted walnuts over the salad and drizzle with balsamic glaze. Add fresh basil leaves for an aromatic touch.

Serve Immediately: Serve the salad fresh to enjoy the contrast of warm nectarines with the creamy burrata and savory prosciutto.
