4 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

1 tablespoon olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare Marinade: In a small bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, rosemary, thyme, salt, and pepper until well combined.

    Marinate Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, sealing the bag or covering the dish. Allow it to marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Prepare the Peaches: While the chicken marinates, prepare the peaches. Brush the cut sides of the peaches lightly with olive oil and set aside.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F / 200°C).

          Grill Chicken: Remove the chicken from the marinade and discard the leftover marinade. Place the chicken breasts on the hot grill. Grill for 6-7 minutes on one side, then flip and cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C).

            Grill Peaches: While the chicken is resting, place the halved peaches cut-side down on the grill. Grill for about 4 minutes until they have nice grill marks and are caramelized.

              Serve: On a serving plate, place a grilled chicken breast and top with a grilled peach half. Drizzle with any remaining balsamic sauce or additional honey if desired. Garnish with fresh basil leaves for added flavor and color.
