4 ripe peaches, halved and pitted

2 tablespoons olive oil

Salt and pepper, to taste

1/4 cup balsamic vinegar

2 tablespoons honey (or maple syrup for a vegan alternative)

1 cup mascarpone cheese (or Greek yogurt for a lighter option)

Fresh mint leaves, for garnish

Crushed pistachios, for topping (optional)

Preheat the Grill: Heat your grill to medium-high. If using a charcoal grill, make sure the coals are even and glowing.

    Prepare the Peaches: Brush the cut sides of the peach halves lightly with olive oil and sprinkle them with a pinch of salt and pepper. This adds flavor and helps create a nice char.

      Grill the Peaches: Place the peaches cut-side down on the grill. Close the grill lid and cook for about 4-5 minutes until grill marks appear and the peaches are slightly softened. Flip them over and grill for an additional 2-3 minutes.
