1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

2 tablespoons all-purpose flour

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

12 oz egg noodles

Instructions
 

Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it up with a spoon. Season with salt and pepper. Cook until browned and fully cooked, about 5-7 minutes. Remove the beef from the skillet and drain excess fat, leaving about a tablespoon in the skillet.

      Add Aromatics: In the same skillet, add the diced onion and sauté until translucent, about 4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet and sauté until they release their moisture and begin to brown, about 5-6 minutes.

          Thicken with Flour: Sprinkle the flour over the mushroom mixture and stir, cooking for about 1 minute to eliminate the raw flour taste.

            Create the Sauce: Slowly add the beef broth, Worcestershire sauce, and Dijon mustard to the skillet, stirring continuously to avoid lumps. Bring the mixture to a simmer and cook for about 5 minutes, until it thickens slightly.

              Stir in Sour Cream: Lower the heat and stir in the sour cream until well combined. Let it simmer for another 2 minutes, ensuring it doesn’t boil to prevent curdling. Adjust seasoning with salt and pepper.

                Combine with Noodles: Add the cooked egg noodles to the sauce, tossing to coat evenly. Heat through for 2-3 minutes.
