1 pound ground beef

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

1 tablespoon olive oil

2 tablespoons all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Cooked egg noodles or rice, for serving

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, and cook until onions are translucent, about 3-4 minutes.

    Brown the Beef: Increase the heat to medium-high, then add the ground beef. Cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.

      Add the Mushrooms: Stir in the sliced mushrooms and cook for another 5 minutes until they have released their moisture and are browned.

        Create the Sauce: Sprinkle the flour over the meat and mushrooms, stirring to combine. Gradually stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and cook until the sauce has thickened, about 5-7 minutes.

          Finish with Sour Cream: Reduce the heat to low and stir in the sour cream until fully combined. Season with salt and pepper to taste. Remove from heat and let it sit for a few minutes.

            Serve: Serve the beef stroganoff over cooked egg noodles or rice. Garnish with fresh parsley.
