Guinness and Irish Cheddar Mac & Cheese

1 cup Guinness stout

2 cups sharp Irish cheddar cheese, grated

1 cup milk

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

1/2 cup panko bread crumbs

2 tablespoons fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, add the flour to create a roux, stirring constantly for about 1-2 minutes until golden.

      Add Liquid: Gradually whisk in the Guinness, making sure to eliminate any lumps. Then, slowly pour in the milk while continuing to whisk. Bring the mixture to a simmer, allowing it to thicken, usually around 5-7 minutes.
