1 lb ground beef (preferably chuck for flavor)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) refried beans

1 can (10 oz) red enchilada sauce

1 can (4 oz) diced green chilies

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

8 small flour tortillas (or corn tortillas, if preferred)

2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Break it up with a wooden spoon as it cooks. After about 5 minutes, add the diced onion and cook until it’s translucent, around another 5 minutes.

      Add Flavors: Stir in minced garlic, green chilies, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until the garlic is fragrant, then remove from heat.

        Prepare Tortillas: While the beef mixture cools slightly, warm the tortillas in a dry skillet or microwave for about 15-20 seconds until they are pliable.

          Assemble Enchiladas: Spread a couple of tablespoons of refried beans on each tortilla. Add a scoop of the beef mixture followed by a sprinkle of cheese. Roll up the tortilla tightly and place seam-side down in a greased baking dish.

            Layer them Up: Continue this process for each tortilla until the dish is filled. Pour the enchilada sauce evenly over the top of the rolled tortillas, ensuring they are fully coated. Sprinkle the remaining cheese on top.
