Ingredients
  

4 medium-sized Russet potatoes

4 tablespoons unsalted butter, melted

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon sea salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Optional toppings: sour cream, crispy bacon bits, or chives

Instructions
 

Preheat your oven to 425°F (220°C).

    Scrub the potatoes thoroughly under running water to remove any dirt. Pat them dry with a paper towel.

      Place each potato on a cutting board. Place a wooden spoon handle or chopsticks along each side of the potato to prevent cutting all the way through. This will create the signature Hasselback slice.

        Using a sharp knife, make thin slices across the potato, about 1/8 inch apart, being careful not to cut through the bottom.

          In a small bowl, mix the melted butter, olive oil, minced garlic, rosemary, sea salt, and black pepper.

            Brush the butter mixture over the potatoes, ensuring it seeps into the slices and coats the outside well.

              Place the potatoes on a baking tray lined with parchment paper.

                Bake in the preheated oven for 45-50 minutes until the potatoes are crispy on the outside and tender on the inside. After 30 minutes, sprinkle the grated Parmesan cheese over the top of the potatoes and return to the oven for the remaining time.

                  Once roasted to a golden perfection, remove from the oven. If desired, top with extra butter, chopped parsley, and any additional toppings like sour cream or bacon bits.

                    Serve immediately and enjoy the delightful textures and flavors of your Hasselback potatoes!
