4 medium-sized russet potatoes

1/4 cup unsalted butter, melted

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Fresh chives or parsley, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prepare the potatoes: Scrub the potatoes under running water to remove any dirt. Pat them dry with a towel. Place a potato on a cutting board and make a series of evenly spaced cuts across the top, about 1/8 inch apart, stopping before you cut all the way through (leave about 1/4 of the potato intact at the bottom). You can use wooden chopsticks or the handles of two wooden spoons on either side of the potato to help prevent cutting all the way through.

      Make the seasoning mixture: In a small bowl, whisk together the melted butter, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.

        Season the potatoes: Place the cut potatoes on a baking sheet lined with parchment paper. Brush the seasoning mixture over the potatoes, making sure to get some in between the cuts. Reserve a little of the mixture for basting later.

          Bake the potatoes: Bake the potatoes in the preheated oven for about 45-50 minutes, basting with the reserved butter mixture halfway through, until they are tender and crispy on the outside.

            Add the cheese: Once the potatoes are tender, remove them from the oven and sprinkle the shredded cheddar and grated Parmesan cheese generously between the slices and on top. Return them to the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.

              Garnish and serve: Remove from the oven, sprinkle with chopped chives or parsley, and serve hot. Accompany with a dollop of sour cream if desired.
