Hatch Chili Turkey Breakfast Wraps

4 large flour tortillas

1 lb ground turkey

1 cup Hatch green chilies, diced (canned or fresh)

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

4 large eggs

1/4 cup milk

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (optional, for serving)

Salsa (optional, for serving)

Instructions
 

Prepare the Filling: In a large skillet over medium heat, add the ground turkey. Break it apart with a spatula as it cooks, about 5-7 minutes until browned. Drain excess fat if necessary.

    Add Veggies: Stir in the diced Hatch chilies, black beans, and corn. Sprinkle with cumin, paprika, salt, and pepper. Cook for an additional 5 minutes until the mixture is heated through.

      Scramble the Eggs: In a bowl, whisk together the eggs and milk until well combined. In a separate pan over medium heat, pour the egg mixture in. Cook, stirring frequently until soft curds form and the eggs are scrambled to your desired consistency. Season with salt and pepper.

        Combine: Gently fold the scrambled eggs into the turkey and veggie mixture, ensuring everything is well combined and heated through.

          Assemble the Wraps: Lay a flour tortilla flat on a clean surface. Spoon a generous portion of the turkey mixture onto the center of each tortilla. Sprinkle shredded cheddar cheese over the top.
