3 ripe bananas, mashed

1/4 cup melted coconut oil

1/2 cup brown sugar

1 large egg, beaten

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1 teaspoon baking soda

1 cup all-purpose flour

1/2 cup crushed pineapple, drained

1/2 cup shredded coconut

1/2 cup chopped macadamia nuts

1/4 teaspoon ground cinnamon (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    In a mixing bowl, combine the mashed bananas and melted coconut oil. Stir until well blended.

      Add the brown sugar, beaten egg, and vanilla extract to the banana mixture, and mix until smooth.

        In another bowl, whisk together the sea salt, baking soda, flour, and ground cinnamon (if using).

          Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.

            Fold in the crushed pineapple, shredded coconut, and chopped macadamia nuts until evenly distributed.

              Pour the batter into the prepared loaf pan and smooth the top with a spatula.

                Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. You may want to cover the top with foil if it browns too quickly.

                  Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
