2 boneless, skinless chicken breasts

4 slices of low-fat Swiss cheese

4 slices of lean turkey or chicken ham

1 cup whole wheat breadcrumbs

1/4 cup plain Greek yogurt

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

Olive oil spray

Fresh parsley (for garnish)

Prepare the Chicken: Preheat the oven to 400°F (200°C). Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick for an even cook.

    Fill the Chicken: Spread a thin layer of Greek yogurt mixed with Dijon mustard on each chicken breast. Place 2 slices of Swiss cheese and 2 slices of turkey ham on top of each breast.

      Roll the Chicken: Carefully roll each chicken breast tightly, starting from one end to the other. Secure them with toothpicks to hold their shape.

        Coat the Chicken: In a bowl, combine whole wheat breadcrumbs, garlic powder, onion powder, dried thyme, salt, and pepper. Dredge each rolled chicken piece in the breadcrumb mixture, ensuring they are well coated.

          Bake the Chicken: Place the coated chicken rolls seam-side down on a baking tray lined with parchment paper. Spray the tops lightly with olive oil spray. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the crust is golden brown.

            Serve: Remove the toothpicks from the chicken rolls. Slice each roll into medallions and serve garnished with fresh parsley.
