2 cups Medjool dates, pitted

1 cup raw almonds

1 cup unsweetened almond butter

1/2 cup cocoa powder

1/2 cup vanilla protein powder (optional)

1/4 cup maple syrup (or honey)

1/4 teaspoon sea salt

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (dairy-free if desired)

1/4 cup toasted peanuts, roughly chopped

Instructions
 

Prepare the Dates: Start by soaking the Medjool dates in warm water for about 10 minutes to soften them. Drain and set aside.

    Blend Ingredients: In a food processor, blend the softened dates and raw almonds until you get a sticky, crumbly mixture. If you have trouble blending, add a splash of water or a little almond butter to help it along.

      Mix the Base: Add the almond butter, cocoa powder, protein powder, maple syrup, sea salt, and vanilla extract to the food processor. Process until well combined and smooth.

        Press into Pan: Line a 9x9 inch baking dish with parchment paper, leaving some overhang for easy removal. Press the mixture firmly into the bottom of the dish using a spatula or your hands to create an even layer.

          Melt the Chocolate: In a microwave-safe bowl or double boiler, melt the dark chocolate chips until smooth. Stir occasionally to prevent burning.

            Drizzle and Garnish: Pour the melted chocolate over the pressed date mixture, spreading it evenly with a spatula. Sprinkle the toasted peanuts on top while the chocolate is still wet.

              Chill: Cover the pan and refrigerate for at least 2 hours, or until the chocolate has hardened and the bars are set.

                Slice and Serve: Once chilled and firm, lift the bars out of the dish using the parchment overhang. Place on a cutting board and slice into squares or rectangles as desired.
