Ingredients
  

1 lb kielbasa sausage, sliced into rounds

4 large russet potatoes, peeled and thinly sliced

1 medium onion, diced

2 cups shredded sharp cheddar cheese

1 cup sour cream

1 cup heavy cream

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/2 teaspoon black pepper

1 teaspoon salt (or to taste)

1 cup breadcrumbs (for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced kielbasa and sauté until golden brown, about 5-7 minutes. Remove from heat and set aside.

      Mix the Creamy Base: In a mixing bowl, combine the sour cream, heavy cream, minced garlic, smoked paprika, dried thyme, black pepper, and salt. Stir well to create a creamy mixture.

        Layer the Casserole:

          - In a greased 9x13 inch baking dish, spread a layer of sliced potatoes evenly across the bottom.

            - Add half of the sautéed kielbasa and half of the onion on top of the potatoes.

              - Pour half of the creamy mixture over this layer.

                - Sprinkle with 1 cup of shredded cheddar cheese.

                  Repeat Layers: Add another layer of potatoes, followed by the remaining kielbasa and onion. Pour the rest of the creamy mixture over it and finish with the remaining potato slices on top.

                    Top with Breadcrumbs: Sprinkle the breadcrumbs evenly over the top layer of potatoes, and drizzle with the remaining olive oil to help them crisp up during baking.

                      Bake: Cover the baking dish with aluminum foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown and bubbly.

                        Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
